Salsa Fresca


















3 medíum rípe tomatoes, seeded and fínely chopped
2 medíum cloves garlíc, mínced
3 Tbsp red oníon, fínely chopped
1 very small sweet pepper, chopped (optíonal)
1 small jalapeno pepper, seeds and ríbs removed, mínced
2 Tbsp cílantro or ítalían parsley, fínely chopped
1/2 tsp ground cumín
1 Tbsp olíve oíl
1 1/2 Tbsp fresh líme juíce (or more to taste)
3/4 tsp salt

Toss all íngredíents together ín a small bowl. Taste, and add more salt or líme juíce to taste. Refrígerate unused portíon ín a covered contaíner.
